Blue Roses Stacked Three Tier Wedding Cake

This is my first attempt at making a stacked wedding cake. All three tiers are rich fruit cakes covered with marzipan and sugarpaste. I chose to be different and made 3 wired sugar flower sprays so that the bride and groom could have a momento of their special day. I stacked the cakes off centre to allow for enough space at the front in which to place the posy picks for the three sugar flower sprays. Normally, heavy edible sugarpaste roses are attached individually, cascading down the cakes. I wired up a length of ivy which sits unattached on the cake board.

The sugar flower sprays comprise of blue roses, white blossoms, rose and ivy leaves. The size of the tiers are 10, 8 and 6 inch round rich fruit cakes. This cake would cost around £600.
